I could use utensils, but I'm on the go with my jobs and I'll be eating in

the car often or else as I'm walking to a different area (as with the pool

attendant/janitor job). Fingerfoods would be more convenient and do-able.

I like " fresh wraps " like at the Thai restaurants. You just buy some rice or

tapioca wrappers, place them in hot water for a second and fill them up with

lettuce, cabbage, carrots, tofu, sprouts, whatever. You eat them cold so it

would be easy for the car. I suppose if you're on the road you could even lay

some dipping sauce inside the wrap.

One recipe that my son likes to take to school, and we all eat with

our fingers, is Tofu Croquettes. I make mine in a food processor,

add some crumbs, make them into croquette shapes, lightly roll them

in some more crumbs and then fry in a little oil.

Muesli bars can make a good filling snack and will help keep your

energy levels up between meals. I keep these in the freezer for the

kids school lunches.

Another recipe that may also be suitable is Lickity Split Lentil

Cold Cuts.
