You just buy some rice or tapioca wrappers, place them in hot water for a second and fill them up with lettuce, cabbage, carrots, tofu, sprouts, whatever. You eat them cold so it would be easy for the car. I suppose if you're on the road you could even lay some dipping sauce inside the wrap.
