( peak months are July and August) When they are the sweetest. Toward the end of the season ( September and October) They can be somewhat mealy and lack flavor. When not in peak season, it is best to use frozen peaches that have been harvested and frozen during their peak. Peaches are a good source of beta-carotene, manganeses, potassuim, and inostiol. Inositol is not considered an essential vitamin; however, one of its many roles is in the body's use of fats and cholesterol. It has been shown to alleviate or prevent the accumulation of excess fat in the liver. 1/2 cup soy milk or milk of choice 1 cup plain low-fat yogurt 1 cup frozen peaches cut into chunks ( if using fresh peaches, cut in chunks and freeze ahead) 1 cup frozen cherries 1 tablespoon honey or to taste 1 teaspoon pure vanilla extract Pour the milk into a blender and add the yogurt, peaches, cherries, honey to taste, and vanilla.
