Rhubarb & Berry Compote

A vibrant low fat dessert, bursting with fresh berry and rhubarb

flavours.

 

 

1 bunch rhubarb, cut into 2 cm (3/4 " ) lengths

3 green apples, peeled, cored & chopped

1 punnet (250 g)(9 oz) strawberries, hulled & halved

1/4 cup sugar

1 cup frozen blueberries

 

 

1. Combine rhubarb, apple, strawberries and sugar in a saucepan.

 

2. Cover and simmer over low heat for 8-10 minutes or until rhubarb

and apple is tender.

 

3. Fold through blueberries

 

 

Serves 8.
