Cooking Time: 5 min. -------------------- Makes a tasty, high fibre lunch or light meal when served with rice. 1 tsp vegetable oil 2 cloves garlic, finel chopped 2 cm (3/4 " ) pice fresh ginger, bruised 1 small red chilli, seeds removed, finely chopped 1 lemon leaf 1/3 cup desiccated (shredded) coconut 430 g (15 oz) can three bean mix, rinsed and drained 1. Heat the oil in a large non-stick frying pan. Add the garlic, ginger, chilli and lemon leaf and cook over medium heat for 2 minutes, or until fragrant. 2. Add the coconut and stir over medium heat until the coconut is toasted and golden. 3. Stir in the three bean mix and heat through. Remove the piece of ginger before serving with rice.
