In a dutch oven, saute onions and garlic in olive oil. Add a minced chipotle pepper in adobo sauce (just a pepper or two, plus a teaspoon of the sauce). Add an ounce of dark or baking chocolate. Add a can of chipotle sauce. Add a large drained can of black beans (or pinto or white). Add a large drained can of mexican-style hominy. Add a large (28oz) can of tomato puree or crushed tomatoes. Add some chili powder, if you like. Cumin + oregano a plus. Stir in some quartered corn tortillas, move to the oven and bake until it bubbles. Alternatively, you could layer corn tortillas with a corn, pepper, and bean mixture, then pour enchilada sauce all over it and bake til hot. A google for polenta casserole might turn up recipes. The ones I use aren't vegan, so I won't share them. You can always make a white sauce (mochiko flour!) or pepper gravy and pour it over cooked al dente pasta (tinkyada), peas, corn, and other veggies (squash), then bake til it looks done. ygg Quote Link to comment Share on other sites More sharing options...
