Replacing Eggs in Bob's Red Mill GF Bread Mix

Mix? If so, what did you use? If not, any suggestions on how to

replace the eggs in GF bread recipes?

 

I use the Bob's Red Mill GF Bread Mix frequently. To make the

mix " vegan " , I make the following substitutions:

 

~ use soymilk instead of dairy milk; water also works well in this mix

 

~ use flax seed gel (recipe in archives) instead of eggs. The flax

seed gel does a good job of binding the bread together and the crumb

is still firm and compact (great for slicing). The bread is more

moist with the flax seed gel, so be sure to store it in the

refrigerator instead of in a bread box or on the counter. If you

don't do this, eat fast! Otherwise the bread spoils quickly!

I use either dry, powdered egg replacer; or 1 T. ground flax seed and 3 T. of

water. I like both. They have different effects, so I choose one or the other

depending on what I'm baking and who for.

Does the the 1 T. ground flax seeds and 3 T. water replace 1 whole large

egg?

I use the flax seed gel for ANY recipe that calls for eggs..

What difference (effects) do you see with egg replacer vs flax seeds?

The egg replacer powder gives a lighter product and is lower in total fat.

 

The ground flax seed product in denser but has more flavour, and the benefits of

the fiber and omega 3 fatty acid.
