Guest guest Posted August 9, 2005 Report Share Posted August 9, 2005 Apricot Rice Source: www.3abn.org 2 c. short grain brown rice 1/2 - 1 c. dried apricots water to cover 1 cinnamon stick 3 -4 Tbsp. Florida Crystals 1/2 tsp. salt Silk Soy Milk to serve 1. Cut apricots into pieces and soak overnight. 2. Place rice and apricots, including apricot soaking water, in a pot. 3. Add the cinnamon sticks and enough water to cover and boil until the rice is soft and creamy, about 40 - 50 minutes. Add more water if needed while cooking. 4. Serve warm or cold with soy milk.
