Guest guest
I've heard that I'm not supposed to cook flax seeds. Only to add them after cooking is done. Anyone have any thoughts? Thankyou, David.
Guest guest
You can cook them, it just destroys the omega-3's that most people take them for. But, if you are using them as a binder in cooking, there is no problem with baking or cooking in any way. I often add it to bread as a binder, for fiber, to increase protein and to make bread look more " whole grain " . Karen > > David > I've heard that I'm not supposed to cook flax seeds. HI LInda! I use ground flax meal 'egg' for anything that calls for an egg. You can also use it to replace 10 to 30 percent of your wheat flour when you bake bread, but you'll get a firmer loaf. and I sprinkle it onto my brown rice , maybe with a little earth balance.. and it's yummy. also you can add it to a pbj (or amond butter & jelly sandwich.. you can sprinkle flax meal onto salads, or oatmeal.. cereal.. etc.. and my flax egg is pretty easy.. I use about one tbsp flax meal to about 1/4 cup (or 3 tbsp ) water.. and I have a book called FLAX the super food by Barb Bloomfield, Judy Brown and Siegfried Gursche it has tons of uses for flax..(check the library) . If you haven't had a chance to look for this book in the next couple of months.. then speak up and i'll type up some of the info from it.. I just dont haev time right now! =) one thing I'll add.. I had been told that if you use flax in something, but bake hotter than 350, the heat harms the omega 3 & 6s.. but this book says that is not so. oh and flax can also be used in place of OIL in recipes at a ratio of 3 to 1... for example 1 1/2 cups of flax seed meal can replace 1/2 cup butter, margerine or oil.. but they tend to brown more rapidly. you might want to contact bob's red mill ... they sent me some info once that was pretty good... though , at the moment, i'm not certain where it is.. again.. i'll find it in a month or two! =) =) jenni On Thursday, February 24, 2005, at 05:50 PM, K.
