Cooking Time: 5 min. -------------------- We all know children burn lots of energy at school. Here is a healthy snack to keep them going to lunch time. 1 cup Sanitarium moist prunes, pitted & chopped 1/2 cup Sanitarium Fancy Extra Large Dried Apricots, chopped 1 cup water 1/2 cup Sanitarium Blanched, Roasted Peanuts, chopped 1 1/2 tablespoons (6 tsp) Sanitarium Natural Smooth Peanut Butter 3 cups GF corn flakes 1/2 cup desiccated (shredded) coconut 1. Place prunes, apricots, water in medium saucepan, bring to boil, reduce heat, simmer for 5 minutes or until fruit is soft and water has absorbed. 2. Add peanuts, peanut butter and corn flakes to fruit mixture, mix to combine. 3. Roll 2 teaspoons of mixture into balls, roll in coconut.
