Guest guest Posted February 22, 2005 Report Share Posted February 22, 2005 Lemon Hummus 1 can (15 or 16 ounces) chickpeas (garbanzo beans), rinsed and drained 4 cloves garlic 1/2 cup tahini (sesame paste) from a (15 ounce) can 5 tablespoons fresh lemon juice 1 teaspoon grated lemon zest Salt and pepper, to taste Place chickpeas in food processor. With motor running, drop garlic cloves through feed tube. Process until chickpeas are finely chopped, about 10 seconds. Add tahini and process until nearly smooth. Add lemon juice and zest, and process until blended. Season to taste with salt and pepper. Use immediately, or refrigerate up to 4 days. Serve at room temperature with pita bread wedges, crackers, or fresh vegetable pieces. Note: If you don't have a food processor, mash chickpeas, and mince garlic by hand. Then blend all ingredients together with wooden spoon. Preparation Time: 15 minutes Servings: 16 Nutritional Information Per Serving (2 tablespoons): 72 calories; 5 g fat; 0 mg cholesterol; 140 mg sodium; 5 g carbohydrate; 1 g fiber; 3 g protein.
