Here's a simple one I use that everyone in the house likes.

 

-2 cans of your preferred cream soup (we use Progresso's Cream of Mushroom, but

I'm not sure if it's Vegan) (measure it out to see how many cups it makes)

-about half-cup less instant rice than the soup

-your choice of veggies (we use canned green beans and corn or a frozen veggie

medley)

-1 lb. of your choice of ground Vegan fake meat

-GF bread crumbs

 

1. Brown the meat. As you are doing this mix the soup and rice in a bowl to

judge how it will absorb. You may need more or less rice, depending on how you

like your rice. In our family's opinion it should be a little wet as it cooks

to play with the bread crumbs.

2. Fill the bottom of a nice baking pan with the meat, then layer the veggies on

the meat. Layer the rice/soup over the veggies, then sprinkle the whole thing

with the bread crumbs.

3. Bake at 350 degrees for about 30 minutes. Maybe more depending on the

veggies you used. You want the veggies to be nicely cooked.

 

If you use frozen veggies, they'll create more liquid on the bottom as they

cook, so you might want to let them thaw before use.

 

I've never tried it, but you may wish to reserve some soup and switch the layers

of rice and veggies and drizzle the soup over the veggies before the bread

crumbs. I don't know how it would look or turn out.

Gluten free vegan fake meats can be hard to come by, at least where I live.

Are you sure your meat substitutes are completely GF ? What are you using?

I'm not the original poster, but in Canada, you can get a gluten free,

vegan ground beef substitute made by Sol Cuisine. I picked some up

the other week, but I haven't tried it yet.
