Guest guest Posted August 15, 2005 Report Share Posted August 15, 2005 Fiesta Pasta and Rice Source: www.3abn.org 2 Tbsp. olive oil 5 c. water 2 tsp. salt, or to taste 1 lb. angel hair pasta (gf if necessary) 4 c. salsa 1 1/2 c. rice - brown, white or a mixture of both 1. Heat the olive oil in a large saucepan. Break the angel hair pasta into thirds and add to the saucepan along with the rice. Sauté on low heat until lightly browned. 2. Add the rest of the ingredients and mix well. Cover pan and cook until done, about 15-20 min. Remove cover and continue cooking for 5 more minutes, stirring occasionally. Serve hot. Yields 24 half-cup servings * This recipe is great for potluck or picnics because it is also delicious eaten at room temperature. It makes a wonderful accompaniment when I am serving Haystacks in the park! You can make it the day before and then just transfer it right to your picnic basket or cooler.
