Lucchini

1 zucchini per person

1/4 tsp. sea salt

 

1. Peel and cut stem end off the zucchini.

2. Put through a Spiroli to resemble linguini or spaghetti, or cut in half

and put through a food

processor on a shedding blade.

 

3. Put zucchini shreds or " noodles " in a bowl and lightly sprinkle with the

1/4 tsp. sea salt. Massage well.

4. Let stand to soften for one hour.

 

5. Drain liquid well before adding sauce.

 

Alfredo Sauce

 

1/2 c. cashews

1 Tbsp. nutritional yeast

1 tsp. light miso (soy)

pinch of dill weed

2 tsp. onion powder

1 tsp. garlic powder

water enough to blend to a thick cream

 

1. Blend all ingredients in blender.

2. Warm and serve over the zucchini " noodles " .
