Guest guest Posted August 15, 2005 Report Share Posted August 15, 2005 Baked Nachos Supreme Source: www.3abn.org 2 c. tomato sauce 2 c. salsa, mild 1 c. black olives, sliced 1/2 c. canned diced green chilies 4 c. chili beans, mild or hot (vegan and gluten free brand) 8 c. tortilla chips 1 Tbsp. jalapeño peppers 1 c. crushed tortilla chips 1. In a large bowl, mix together the tomato sauce and salsa. Set aside. 2. Pour half of sauce mixture into a 13' x 9 " x 2 " glass baking dish. Place 4 c. tortilla chips on bottom and sides of dish. Pour chili beans on top of chips. Add 1/2 c. black olives. Repeat with remaining sauce, tortilla chips, olives and beans. Top with 1 c. crushed tortilla chips and jalapeño peppers. 3. Cover with aluminum foil and bake at 350° for 30 minutes. Remove aluminum foil and continue baking for an additional 10-15 minutes until chips are golden. Yields 20 half-cup servings * You can top this with soy cheese if desired. You can add shredded lettuce and fresh diced tomatoes just before serving.
