Guest guest Posted April 19, 2005 Report Share Posted April 19, 2005 PORKKANA LATTIKO (Finnish Carrot Loaf) 150mls uncooked brown rice 300mls water 500mls soy milk (or alternative) 500g carrots salt 2 Tbsp golden syrup 1/2 cup gluten free breadcrumbs 2 tspns non dairy margarine Cook rice in water. Grate carrots. Mix rice, milk, carrots, salt, golden syrup together well. Put into casserole dish. Mix melted margarine with breadcrumbs and cover top of casserole with crumbs.
