Guest guest Posted April 19, 2005 Report Share Posted April 19, 2005 Creamy Garbanzo-Onion Soup 2 Tbsp. oil 1 cup chopped green onions 2 Tbsp. gluten free flour (fava/garbanzo) 4 Tbsp. chicken-style seasoning 4 cups water 1 tsp. Italian seasoning 1 tsp. parsley flakes 1 tsp. salt 1/2 tsp. garlic powder 1/2 tsp. sweet basil 2 cups cooked, unsalted garbanzos 2 cups soy milk (or alternative) 1 cup fresh-cooked or canned mushrooms (optional) In a soup pot, sauté onions in oil until soft. Stir in flour. Add remaining ingredients except for soy milk and mushrooms. Simmer about 30 minutes. Puree the mixture. Return to soup pot, add soy milk, and bring to a simmer. Add mushrooms if desired. Adjust seasoning to suit your taste. Garnish with chopped, fresh parsley. Serve hot. Makes: 10 / 6 - oz. servings.
