Guest guest Posted April 19, 2005 Report Share Posted April 19, 2005 Lemon Tofu Cheesecake 1 Tbsp. lemon juice 2 Tbsp. cornstarch dissolved in 2 Tbsp. water 1 lb. firm silken tofu 1 tsp. vanilla 1/3 cup sugar (or alternative sweetener) 1/2 tsp. lemon zest 1 Tbsp. tahini 1/2 tsp. almond extract (water based) 1/2 tsp. salt Blend all ingredients together in blender until very smooth. Pour into a crust of your choice. Bake at 350 degrees for 30 minutes. Cool and serve with a fruit topping. *A nut and coconut crust would be a nice choice for this cheesecake.
