In a similiar situation, I traveled with a rice cooker! A tasty dish can be

made simply by adding fresh or dried herbs, seeds, and chopped nuts to either

brown, wild, and/or white rices. Most of the ingredients can be blended

together at home and placed in a zip-lock bag. When you are " in need " of the

food item, add water and turn on the rice cooker. . .and a delicious meal will

result. You can also keep in mind easy, convenient foods at the supermarket

that you can pick up and take along with you to the family dinner (premade

coleslaw or an herbal salad mix; a bag of frozen vegetables --- the fancy ones

are nice) are always nice additions that seem to get eaten up quickly, even

though they don't take hours to prepare. Side dishes like a jar of fancy

pickles, olives, and pickled beets are also a welcome addition to most meals.

Success to you! It's not easy. . .but I know you'll come up with something

great. Let us know how it turns out.

>>>I'm traveling 12 hours to attend a family reunion. I will be staying

in a hotel that has a microwave, so there won't be a way for me

to " cook " . I need to find out if any of you have ideas about a dish

I can take to the reunion that is easy and that I can actually eat.

I grew up in a very Southern family, so I'm fairly certain that most

dishes there I can't/won't eat. Any ideas/suggestions will be

greatly appreciated! Thank you!!

a cooler with ice. ;)

hummus & cornchips

tomato salad (tomatoes, roasted peppers, etc, tinkayada brown rice pasta is

nice, too... dress with olive oil, balsamic vinegar, fresh herbs) it will

keep a day or two if you don't overdo the vinegar

bean salad

spiced nuts/popcorn

My family reunion was the past weekend, but I didn't go. Mississippi is too

far a drive for me right now. Maybe next year.

I'm traveling to Mississippi myself! Which part of the state are you

from? I'm from a small town outside of Greenwood.

I'm not from Mississippi. My dad was born there and his extended family is

there (some of them, some of them live in Indiana, where I was born).

Northern Mississippi, tiny little towns in Prentiss County (Old Tishie).
