Guest guest Posted June 8, 2004 Report Share Posted June 8, 2004 Taco Baked Potatoes Serves 10 Have 10 potatoes on hand Have salsa on hand (3-4 c.) 2 c. soy yogurt Cooked red or black beans or any cooked beans, i.e, reds, whites, pintos, 4 c. Store salsa and cooked beans in separate plastic ziploc bags in freezer. To serve, bake potatoes in oven in skins 40 minutes or until soft. Thaw beans and salsa. Heat beans through.
