Marilyn Marilyn, I posted several salad dressing recipes today that don't use tofu, but for recipes using tofu: try substituting an equal proportion of cashews or Brazil nuts; a nut butter; or brown rice. I know this sounds crazy! But I've tried doing this and it works! The cashews or Brazil nuts work very well, but sometimes I want a lower fat option --- so use brown rice instead. Sometimes the nuts, nut butters, or brown rice don't thicken quite as well so I add Instant Clear Jel to the recipe. It doesn't require cooking to thicken. . .but just stirs in for a nice thick texture. I believe it is from a corn source so is gluten free (I'll have to look that up. . .I researched it once and decided it was okay to use for our family. . and promptly forgot the details. . .sorry). Tofu and soy in recipes can generally always be replaced with another food product. So, if you find a recipe that uses soy. . .just seek the alternative instead of tossing the recipe out. for example, I've found that fava bean/garbanzo flour makes a great replacement for soy flour. I am not worried about fat content--Anna's pretty slim. Thanks for the hint about the bean flour! And where do you get the Instant Clear Jel? I've been looking for it for months, with no luck.
