Aaloo Gobi (Potatoes n Cauliflower dry subzi)

Amount Measure Ingredient -- Preparation Method

1/2 cauliflower -- (small florets) - break them if

needed

1/2 medium red onion -- thinly sliced

1 potato -- (peeled and diced into 1 cm cubes)

1 tsp cumin powder

2 green chillies -- (sliced)

salt -- to taste

1/2 tsp mustard seeds

1 tbsp oil

1 tbsp cilantro -- chopped (OPTIONAL)

1 handful green peas

1/4 tsp turmeric powder

1 tbsp tomato paste

 

Heat oil in a pan, add mustard seeds and allow it to crackle

 

Add onions and saute until they caramelize

 

Add potatoes and saute for 4-5 minutes, add cumin powder, turmeric powder,

cauliflower and green peas, saute for 3-4 minutes

 

Add tomato paste and oone cup water, add chillies and stir well. Cover and

cook for about 10 minutes or until potatoes are cooked

 

Adjust salt

 

Add chopped cilantro and serve hot!
