Guest guest Posted June 6, 2004 Report Share Posted June 6, 2004 # This recipe is: Vegetarian # Vegan # Dairy Free # Wheat Free # Gluten Free # Soy Free # Egg Free # Corn Free # Casein Free This tastes a little like rice crispy treats, and a little like chex mix, only sweeter (but this is much healthier than either of these, no butter/margarine, no corn syrup.) Ingredients: # 1/4 Cup Raw Nut Butter (we used cashew and also almond butter, both turned out excellent) # 1/3 Cup Maple Syrup # 3 Cups Puffed Rice Cereal* # 1 Cup Pistachios # 1/4 Cup Dried Cherries** *We prefer Arrowhead Mills because the ingredients are " puffed brown rice " and that's it. **You could also use another dried fruit, perhaps raisins Preheat oven to 340 degrees. Mix together nut butter and maple syrup in a large bowl. Add dry ingredients starting with puffed rice cereal, then pistachios, then dried fruit to nut butter/maple syrup mixture. Spread on non-stick pan, about 1/5 inch thick. Cook for 20 minutes. Cut in squares using pizza cutter, and leave out until cool (may take a while, you can pop them in the refrigerator if you don't want to wait.) Makes about 6 servings. Enjoy!
