I am wondering what I can substitute for the juice of one lemon for this recipe?

My youngest is allergic to eggs, soy, corn, all citrus fruits, etc. I'd like to

make

this eggless mayonaise for him, also can I use coconut milk instead of soy or

almond milk? Or, is it better to use rice milk? (I'm always trying to fatten

my

kids up, all the weight seems to jump on me not them!) I'm also wondering

about the stevia, can I substitute sugar, if so how much? My kids don't like

the

after taste of stevia. I use a packet in my tea without a problem. My oldest

will

sometimes use it in his coffee. (Is coffee GFCF?) Thanks bunches!

Eggless Mayonnaise

Source: Stevia - Nature's Sweet Secret

 

 

1 cup almond milk or unflavored soy milk

1 Tbsp (3 tsp) onion powder

1 Tbsp (3 tsp) sea salt or salt substitute

1/4 - 1/3 tsp stevia extract (white powdered)

Juice of 1 fresh lemon

2 cups cold pressed oil (Safflower, Canola, etc.)

 

 

Put " milk " in food processor fitted with the metal blade and add onion powder,

salt, stevia, and lemon juice. Porcess for about 30 seconds as you slowly add

the oil through the feed tube. The mixture will begin to thicken. Longer

processing will result in thicker mayonnaise.

 

 

Makes 3 cups.

 

 

This mayonnaise has very few calories and no cholesterol.
