Cream of Potato Soup

Source: Cooking with Natural Foods/Beltz

 

Chop up:

 

2 med. onions

8 sticks celery

1/2 c. parsley

 

Put in pan w/ 1/2 c. water and steam 5-8 minutes

 

Add

 

5 c. water

5 potatoes cubed

2 T. salt

1t. sweet basil

1/2 t. thyme

1/4 t. oregeno

 

Boil until potatoes are soft. Blend 1/2 c. cashews and 1 c. water.

Add to soup and simmer.
