Guest guest Posted April 19, 2005 Report Share Posted April 19, 2005 Lanttu Lattiko (Finnish Turnip Casserole) 1 medium sized turnip chopped in tiny pieces 2/3 cup seasoned gluten free bread crumbs 2/3 cup soy milk of your choice (or other milk alternative) 1/3 cup pure maple syrup 2 tbsp cinnamon 1/4 cup corn butter (dairy free) Boil turnip until very soft. Mash turnip with electric beaters. Add corn butter and mash until smooth. Add bread crumbs, soy milk maple syrup and cinnamon. Again mix with electric mixer until all blended well. Add to a slightly oiled casserole dish and cook at 350oF for approximately 1 hour or until top is formed a light brown crust but do not dry out.
