Cashew Casserole

Source: Weimar Cookbook

 

1 1/2 cups coarsely chopped cashews

1 large chopped onion, steamed

1 tsp. paprika

1 cup cooked brown rice

1 cup chopped mushrooms

1 cup dry bread crumbs

1 tsp. soy sauce or tamari (or Bragg's Liquid Aminos)

1/2 tsp. salt

1/4 tsp. thyme

3 Tbsp. minced parsley

1 cup milk, soy or nut

 

Steam onions in small amount of water. Combine all ingredients and place in

1 1/2 quart casserole. Bake at 350 degrees F. for 45 minutes.

 

Serves: 6
