Peanut Butter Loaf

Source: Weimar Cookbook

 

3/4 cup old fashioned peanut butter

1 cup soy or nut milk

1/2 cup chopped onion

3/4 tsp. salt

1/2 tsp. sage

2 1/2 cups grated carrots

1 3/4 cup cooked brown rice

1 cup bread crumbs (gluten free if necessary)

 

Cream first two ingredients together until smooth. Steam onion in small

amount water. Combine peanut butter mixture, onions, and all the remaining

ingredients. Mix thoroughly. Bake in spray prepared pan. Bake at 350 F.

degrees for 1 hour or more. Cover first 45 minutes, then uncover to brown

on top. Serve plain or with brown or tomato gravy.
