Guest guest Posted April 20, 2005 Report Share Posted April 20, 2005 Festive Potato Fans Source: Creation, Illustrated Vol. 3, No. 3 6 large baking potatoes olive oil (optional) chopped scallions nondairy sour cream paprika Wash potatoes and lightly rub olive oil on skins. Cut across each potato to make sliced about 1/4 inch thick, being careful not to cut all of the way through the potato. Bake at 350 degrees until done. As potatoes bake, the slices will open in a fanlike fashion. Garnish with a dollop of nondairy sour cream, paprika, and chopped scallions. Also delightful with your favorite gravy recipe.
