Apple's N' Rice

Source: Vegetarian for Life

 

2 cups cooked brown rice

1 medium apple cored, peeled and chopped

1/3 cup unsweetened apple juice

1/4 cup pure maple syrup

1 Tbsp. lemon juice

1/2 tsp. cinnamon

 

Combine all ingredients in casserole dish. Cover. Bake at 350 degrees

F. for 45 minutes.
