Guest guest Posted September 8, 2006 Report Share Posted September 8, 2006 Greek Tofu Salad Source: Judy 1/2 Lb Tofu cut into ½ " cubes 1 Red onion sliced thin 1/2 can sliced Black Olives 1 Cucumber de-seeded and sliced in thin slices 1 cup marinated Artichokes, opt. 1 Large Ripe tomato, sliced or cubed To incorporate more color add sliced green and yellow Bell Peppers Mix the above together and marinate in 1/2 cup Lemon Juice, 1/2 cup olive Oil and salt to taste.
