Guest guest Posted April 20, 2005 Report Share Posted April 20, 2005 Herbed Potatoes Source: Vegetarian for Life 4 - 6 medium potatoes Olive oil Sea salt Fresh herbs such as: thyme, oregano, chives, etc. (or seasoned salt) Wash potatoes but do not peel. Cut each potato into 1-inch cubes. Toss potatoes in a little olive oil and place in covered wok or fry pan. Allow to steam for about 5 minutes. Remove lid and continue to fry until golden brown.
