Guest guest Posted April 20, 2005 Report Share Posted April 20, 2005 Tofu Crepes Source: Vegetarian for Life (adapted) 1 (300 g.) package soft tofu 1 1/2 cups soy or tofu milk 3 tsp. baking powder 2 Tbsp. maple syrup 1 1/2 cups gf flour blend (or cornstarch) 1/2 tsp. vanilla Preheat a 6-inch non-stick frying pan. Place all ingredients in a blender. Blend until very smooth. Pour 1/3 cup batter into hot frying pan. Fry until lightly browned on both sides. Serve rolled with thickened fruit in the middle.
