This also concentrates the kilojoules, however and just five dried apricot halves supply the same number of kilojoules as a slice of bread. Drying does not affect the beta carotene content, so dried apricots are an excellent source of vitamin A, as well as fibre, protein and minerals like, iron, calcium, phosphorus and potassium. At 24% dietary fibre, they are as concentrated as a bran breakfast cereal, but their type of fibre acts differently in the body. A large plump dried apricot (weighin 7g) supplies, trace of protein, trace of fat 3g sugars, no starch, 2g dietary fibre and 54 kilojoules (13 calories).
