(Use ingredients that are fresh and organic, whenever possible) # 1 can Muir Glen Organic Fire Roasted Diced Tomatoes with Medium Green Chilies (14.5 oz.) # 1 Cup Water # 1 Cup Rice (we used a blend of 1/4 cup Long Grain Brown Rice and 3/4 Cup California White Basmati Rice)* # 2 1/2 Cups Tomato Juice # 1/8 Cup Chopped Black Olives # 1 Clove Garlic # 1/2 Medium Onion (or 1 Whole Small Onion) Coursely Chopped # 1 tsp. Cilantro # 1/4 tsp. Cayenne Pepper # 1/2 tsp. Cumin # 1/2 tsp. Chili Powder # 1 tsp. Paprika Directions: In large cast iron skillet, put together all ingredients and cook on high heat for a couple of minutes, stirring until boiling. Then reduce heat to low, cover rice, and let simmer, stirring occasionally, for about an hour. *Long grain rice takes a long time to cook, for regular white rice it will take much less time.
