Guest guest Posted April 19, 2005 Report Share Posted April 19, 2005 Better Than Butter (Garlic Butter/Sweet Butter) Source: Vegetarian for Life *Cooked millet can be used in place of cornmeal if sensitive to corn. 1 cup cooked cornmeal, 1/4 c. cornmeal simmered in 1 cup water until soft 1/4 cup unsweetened coconut 1/2 tsp. sea salt 1/2 cup water 1 Tbsp. nutritional yeast flakes Place all ingredients into a blender. (Hot or warmed cornmeal works best). Blend until very creamy and smooth. Pour into a container or bowl. Cover. Place in fridge to chill. Butter will set up in fridge. Options: to make " garlic butter " add: 1 tsp. garlic powder or 1 - 2 fresh garlic cloves 1 Tbsp. parsley flaked (Butter bread and toast in oven to make garlic toast). Options: to make " sweet butter " add: 1/4 cup pure maple syrup and decrease water to 1/3 cup instead of 1/2 cup (Use on pancakes or waffles).
