Guest guest Posted June 8, 2004 Report Share Posted June 8, 2004 Homemade Rice-o-Roni This is even tastier than the store bought stuff and very cheap to make a huge batch. With the leftover rice you can add leftover vegeburger or TVP or soy " chicken " strips plus plenty of broth and you have a great soup for lunches or another supper. 3 cups water 1 1/4 cups rice 1/2 cup spaghetti broken in small pieces (if gluten-free, use quinoa/corn pasta) 3 tbsp. powdered beef-like seasoning or chicken-like bouillon 1/4 cup EACH chopped carrot, celery and onion 2 tbsp. margarine (vegan like Earth Balance) Melt margarine in skillet. Add rice and spaghetti and cook until lightly browned. Stir in all remaining ingredients. Bring to a boil. Reduce heat, cover and simmer for about 25-30 minutes or until water is liquid is absorbed and rice and spaghetti are tender. Quote Link to comment Share on other sites More sharing options...
