Guest guest Posted June 13, 2004 Report Share Posted June 13, 2004 Fruited Acorn Squash Rings 2 lg Acorn squash 4 tb vegan margarine, divided 2 tb Maple syrup 1 md Onion, quartered and sliced 1 lg Golden Delicious apple, cut into 1/2 " pieces 1 lg Red Delicious apple, cut into 1/2 " pieces 1 Banana, sliced 1 Orange, sectioned and cut into 1 " pieces 1/2 ts Curry powder 1/4 ts Pepper (optional) 1/4 ts Salt 2 tb Chopped toasted almonds Cut ends from squash. Slice each squash crosswise into 4 rings. Remove seeds. Place rings in an oiled, foil-lined baking pan. In a small saucepan, bring 2 tb margarine and syrup to a boil. Brush each ring with syrup mixture. Cover and bake at 350 degrees F for 30 minutes. Uncover and bake another 10 to 15 mintues, bating with syrup mixture. In a skillet, saute onion in remaining margarine. Add apples and cook until crisp-tender, about 3 minutes. Stir in banana, orange and seasonings. Heat through. Place rings on serving platter.
