Guest guest Posted November 17, 2005 Report Share Posted November 17, 2005 Here's my favorite recipe for grilled eggplant: Grilled Eggplant Peel eggplant and slice into 1/2 " slices. Soak in salt water and then rinse, drain, and pat dry with a paper towel. Heat a dry skillet to medium high heat. Do not add oil. When skillet is hot, place eggplant slices upon it. Sprinkle with salt and sweet basil. Grill until browned. Turn and grill on the other side, sprinkling again with salt and sweet basil.
