I saw some great recipes today for a porcini mushroom and baby spinach pesto, sundried tomato and olive oil pesto, and another which was parsley and spinach based, but I don't just want to use them on noodles all the time. BL, baked tofu with pesto sounds good to me and would be less expensive. . ..actually, I love pesto and can eat it on about anything! Guest guest Posted December 16, 2004 Report Share Posted December 16, 2004 Because there are so many varieties of pesto, I can see that it would have it's place, but I am hesitant to eat so much oil (albeit olive) at a time. Does it taste of the oil? I am afraid I can't do soy products LaDonna. I little hidden in a food sometimes, but it gives me a hyper mind (which, of course might not be a bad thing - lol). Does it taste of the oil? It would depend upon your recipe or if you purchase a commercial pesto. There are recipes on the Christian Vegan Cooking list for pesto that contain no " free fats " , depending upon nuts for the fat in the recipe, and they won't taste oily.
