Question about pestos

On the Food Network (in Canada) today, several of the chefs were making pestos.

Since these are always made from raw foods, I was wondering if anyone had any

ideas on what to use them on besides crustini and pastas.

I have one recipe that adds vinegar and oil to make it into a

vinaigrette, and another that adds coconut milk and apple juice

concentrate to make a sauce (for something not vegan), and a few

others recipe ideas that aren't vegan. The same recipe also suggests

using it for noodle stir-fries or as a salsa on steamed veggies.

Pestos are delicious with potatoes, BL. Diced or shredded potatoes. . .lightly

steamed or fried. . .and then served with a layer of pesto is delicious!

There's a recipe in the files (in appetizers) called " Eggplant Roll-

ups " . It uses pesto on slices of eggplant, which are then rolled up.
