I have used tofu-based fillings and they work fine.

Filling Ideas?

 

 

Does anyone have ideas for fillings that would work in Belgium Endive leaves

(rather than in bread)? Rachel Ray just demonstrated a crab filling in

endive leaves and it was so pretty! I'm trying to think of a vegan and

gluten free version that would work instead.

PS: I've changed my mind about using Belgium Endive leaves and will use Romaine

instead. I just returned from the supermarket and Belgium Endive wsa $3.99 for

one small " heart " . Since I'm serving a group of seven I decided to take the

more economical route.

Good idea, Roy. I've decided that for one of the fillings I'll make eggless

egg salad using tofu, Veganaise, Bill's Best Chicknish', and black olives.

I like that combination with crisp, fresh greens!

Yikes! That's weird--it's almost in season here, so I imagine it's in

season further south. If you can have a garden, plant some now!

Endive grows reasonably well in containers, too.

That's so funny YGG. To think of planting anything in the garden now is very

funny to me. Around here we don't plant until the May long weekend (Victoria

Day) and so that's at least 6 or 7 weeks before we even consider putting seeds

in the ground. I am guessing then, that endive won't grow here - lol.

 

And yes LaDonna, it's about that here too - which explains why a salad at McD's

costs $7.

 

BL - who thinks of Tigger in the Fifel movies whenever anyone says en-deeve

Ill have to research that. Since I am still working on a vegan raw diet

(failing miserably). I havent used endive, but I should, I have been using

romaine lettuce. I put shredded carrots, fresh salsa, chopped peppers, and raw

sunflower seeds and roll them up for lunch. its so delish!!!
