I know just one source is not the answer, but this was well written and might answer some questions. http://www.wholefoodsmarket.com/nutrition/vegetarian-diet.php<http://www.wholefo\ odsmarket.com/nutrition/vegetarian-diet.php> What is interesting to me since I became aware of the benefits of not eating animal products, is how many people feel this way, and how well grocery stores are listening.[!] Had a great broccoli-curry soup today: ~~ two medium broccoli heads and stalks, peeled of the outside tough layer, then cut up small, added veggie broth base to the simmering broc. [about 3 cups of water] ~~1 1/2 teaspoon curry powder, salt and pepper to taste. ~~1/3 chopped onion sautéed in 2 teaspoons olive oil, then added to the soup. ~~I used about 1/2 cup of oatmeal to thicken the soup, adding fiber rather than just thickening with flour or cornstarch. ~~After all this had thickened and the veggies were semi soft I used my potato masher to squish the veggies. ~~Then I added about 1 cup of 2% canned evaporated milk. As I served it I added a sprinkling of small fresh basil leaves to each bowl. It was enough for three, but the two of us enjoyed a bit more than we should. Oops... but since it was so nutritious, we didn't care! We also had a heavy grain artisan bread, spread with perfectly ripe avocado. Sorry to admit, it was not a really low cal meal, however as it was all veg., there was no concentrated protein to count against the day's total. This was our main meal for the day.
