Most of the recipes I will post use millet flour. To buy you might not

always get a pure product or it can be spendy. I recommend grinding

your own flour if you can. I have a grain attachment on my juicer,

which I love. If I did not I would buy a whisper mill. Flour that you

grind yourself that is fresh is so much better then what you can buy in

the store, and it changes the taste of your food. I always grind my own

now. Also it drops the cost of rice/millet flour to be really cheap.

It helps the budget.

 

I also know that my flours contain no cross contamination because I

grind my own. It is a real peace of mind.

 

Another note about Kraft foods. I called them today because I like the

barbeque shake 'n bake glaze for our tofu.. But it had modified food

starch and did not list the source. I called them today, and they told

me that all their food is clearly labeled. That if any gluten grain is

in the food, it is listed. That if it is not listed I can be sure it

does not contain any. They also told me that they use only Corn,

tapioca, or potato modified food starch and that if it is a gluten

product it will be listed in parentheses. They are very aware of gluten

intolerance in America and are doing their best to label each and every

prodoct.
