Guest guest Posted August 17, 2005 Report Share Posted August 17, 2005 Red Potato Salad Source: www.3abn.org 6 c. red potatoes, cubed 1 - 2 c. celery, sliced 1/4 - 1/2 c. red onion, minced 1 c. Italian parsley, minced 1 1/2 tsp. salt 1 - 2 c. Speedy Tofu Spread (recipe previously posted) 1. Cube potatoes and cook covered with water until al dente (just done). 2. Pour off water, saving liquid. 3. Put cooked potatoes in large bowl. 4. Add all other ingredients. 5. Mix lightly. 6. Adjust seasoning with a little lemon juice or potato water.
