My son started cooking these (after having them at home) to take to work for his meals and everyone wanted the recipe! Nut Stuffed Mushrooms. 1 - 2 flat mushrooms per person (this recipe will fill around 6 mushrooms around 2 1/2 - 3 inches across) 1 large onion 2 cloves garlic a little oil for frying 1/2 cup roasted hazelnuts (walnuts work really well too. My 1/2 cup is very heaped) 1/2 tsp dried thyme 1/2 tsp dried rosemary 2 tbsp fresh herbs (I use parsely and chives in equal amounts, and am very generous with the amounts but don't actually measure them) salt and freshly ground black pepper Remove stems from mushrooms, and dice. Dice the onion and crush the garlic. Fry the chopped mushroom stalks, onion and garlic in a little oil until onion has browned. Grind the nuts in a food processor. Add herbs and a little slurp of olive oil. Add onion mixture to nuts and mix together. Add salt and pepper to taste. Stuff mushrooms with mixture.
