Cornmeal Porridge

1/3 c. Cornmeal

2 c. water

1/4 tsp. sea salt

1/8 tsp. nutmeg

1/2 c. soy milk

2 tsp. vanilla flavoring

3 Tbsp. fructose

 

1. Mix cornmeal with 1/2 cup of the water to make a paste.

 

2. In a saucepan bring 1 1/2 cups water and sea salt to a boil. Slowly pour the

cornmeal paste and

nutmeg into the boiling water, stirring constantly, on low for 7 minutes.

 

3. Stir in soy milk and flavoring add additional water if porridge gets too

thick.

Sweeten with fructose.

 

Serves 3-4
