Avocado Creme Cake

Crust:

7/8 c. dry cereal crumbs (gf if necessary)

1 - 2 Tbsp. date or maple syrup

3 Tbsp. coconut milk or Earth Balance spread

Cake:

1 1/4 c. avocado

1 1/4 c. coconut milk

1/2 c. honey

3 Tbsp. lime juice

1/2 Tbsp. lime zest

1 Tbsp. lecithin granules

1/2 tsp. vanilla

 

1. Combine all cake ingredients in a blender. Blend until smooth.

 

2. Prepare crust by combining crust ingredients and pressing into a 5 1/2 "

spring-form cake pan

or 9 inch pie plate.

 

3. Pour Avocado Crème Cake filling into prepared crust.

 

4. Freeze at least 8 hours before serving.
