Guest guest Posted August 17, 2005 Report Share Posted August 17, 2005 Karline's Vegan Peach Crumb Cake Source: www.farmfreshtoyou.com (adapted) 1 1/2 C sugar or sucanat 1 1/2 C gluten free flour blend 1/2 C soy flour 2 tsp baking powder 1/2 C vegetable shortnening 1 tsp ground flaxseed 1/4 C water 1 tsp pure vanilla extract 3/4 C vanilla flavored soy milk 1 C chopped fresh peaches Preheat oven to 350º F. Coat an 8 x 8 square baking pan with non-stick cooking spray. In large bowl, combine sugar, flours, and baking powder. Cut shortening into flour mixture with two knives until the shortening is the size of small crumbs. Remove 1 C of this crumb mix and set aside. In small bowl, mix flaxseed, water, and vanilla. Add soy milk. Then add liquid to dry ingredients in the large bowl, and stir lightly. Add peaches, stirring until just combined. Pour batter into prepared pan. Sprinkle the top with reserved crumb mix. Bake 45 minutes, or until knife inserted in center comes out clean. Allow to cool before serving.
