Guest guest
We're going to try making thick amazake this week (cultured sweet rice), as soon as our koji arrives. I'll report once we've tried it. http://bunnyfoot.blogspot.com/2006/02/homemade-amazake.html Kimberly in CA
Guest guest
If I remember correctly, the pineapply juice curdles the milk but I can't swear to it. My children don't like drinking yoghurt so it's hard to say. And no, I don't remember anyone saying about using more Dari-Free because if it's too concentrated, the nutritional elements might cause problems. I wonder if you made a slurry to thicken it from cornstarch and the pineapple juice if it would be different.
