non soy yogurt?

I am sorry Tracey, the only youghurt like thing I know that is gf

would be an ersatz yoghurt from Lisa Lewis's Special Diets for Special

Kids. It is more like a Yop than a greek yoghurt.

Hi Tracey!

 

I have to confess, I haven't yet tried the following recipe, but I was

thrilled to find it b/c it's soy-free. :)

 

It seems to lend itself to some modifications of thicker or thinner, more or

less tart, etc. if you are willing to experiment.

Strawberry Yogurt Source: Country Kitchen Collection

 

1 1/2 cups cold water

1/2 cup cashews

1/2 cup hot cooked rice (-OR- millet)

1 cup frozen strawberries

1/4 cup soft dates

1/8 tsp salt

1 tsp lemon juice

 

Whiz cashews and rice in 1 cup water until smooth. Add remaining ingredients

to blender. Chill and serve. May use other frozen fruit.

Hi Brenda-Lee

I tried that recipe but it tasted so sweet and fruity, plus it was

runny. Do you know of anyone having tried it with water instead of

pineapple juice, and more DariFree to make it thicker?

this recipe off the web? Did you know that a teen-ager from Canada wrote the

Is this a vegan cookbook? Do most of the recipes make use of whole real

foods like the one posted? I'm interested in purchasing it.

Does brown rice work well in this recipe?

Hi LaDonna! No, I don't have the book - I didn't know anything about it; it

was in our database on .

 

(D'uh ... I have all my vegan groups on one account and I was about to give

the link, when I realised I found it in THIS group's database!)

 

I didn't understand the Country Kitchen Collection reference, but it seemed

to be a credit and trying to give credit where credit is due :) I passed it

on.

 

(Speaking of credit, one really needs to check out the database section -

all kinds of good references, recipes, etc. And I especially appreciate

when they are labelled soy-free (SF). :) And there are some there from

you, LaDonna!)

 

But a teenager wrote it!! Wow! And Canadian too! Go Canada! (I'm on the

East Coast!) :)

 

I was just so happy to find a yoghurt subsitute that was soy-free! I'm glad

it seems other people have tried the recipe; perhaps we can learn from the

experience when we make it ourselves. :)

 

I'm so glad the recipe is useful! I usually lurk in all my groups b/c I

don't usually have much to contribute; I was thrilled w this request! :)

If you make your own yogurt at home you will end up with a completely different

yogurt.

It's wonderful at home! I used the directions from Ruth Yaron's book. I think

it's Super

Baby Food. You might have to play around with starters at first. My favorite

was using

Westsoy plain. It's not white like greek yogurt, but you can get it pretty

think if you keep

using more starter for each batch. I use a big pot on the stove and put the

yogurt in

mason jars.
