It seems to lend itself to some modifications of thicker or thinner, more or less tart, etc. if you are willing to experiment. I hope this helps! His in JOY (: Sunshine Strawberry Yogurt Source: Country Kitchen Collection 1 1/2 cups cold water 1/2 cup cashews 1/2 cup hot cooked rice (-OR- millet) 1 cup frozen strawberries 1/4 cup soft dates 1/8 tsp salt 1 tsp lemon juice Whiz cashews and rice in 1 cup water until smooth. Do you know of anyone having tried it with water instead of pineapple juice, and more DariFree to make it thicker? I didn't understand the Country Kitchen Collection reference, but it seemed to be a credit and trying to give credit where credit is due I passed it on. (Speaking of credit, one really needs to check out the database section - all kinds of good references, recipes, etc. And I especially appreciate when they are labelled soy-free (SF). I used the directions from Ruth Yaron's book. I think it's Super Baby Food. You might have to play around with starters at first. My favorite was using Westsoy plain. It's not white like greek yogurt, but you can get it pretty think if you keep using more starter for each batch. I use a big pot on the stove and put the yogurt in mason jars.
